Zucchini Tomato Thyme Skillet

Ingredients

  • 0.25 tsp(s) Salt
  • 1 tps Coconut Aminos
  • 1 tsp Thyme, fresh
  • 1 tsp ground (2.3 g), Black Pepper - Ground
  • 160 g Tomatoes
  • 300 g Steamed

Instructions

  1. Prepare your vegetables by slicing the zucchini into thin rounds and chopping the tomatoes.
  2. Season the sliced zucchini with salt, ground black pepper, and fresh thyme.
  3. Heat a skillet over medium heat and add a dash of coconut aminos to prevent sticking.
  4. Arrange the seasoned zucchini slices in the skillet and let them cook for about 5 minutes until they are slightly tender.
  5. Add the chopped tomatoes to the skillet and cook for an additional 5 minutes until the tomatoes are just softened and the zucchini is fully cooked.
  6. Sprinkle the dish with additional thyme before serving warm.
