Instructions
- Prepare your vegetables by slicing the zucchini into thin rounds and chopping the tomatoes.
- Season the sliced zucchini with salt, ground black pepper, and fresh thyme.
- Heat a skillet over medium heat and add a dash of coconut aminos to prevent sticking.
- Arrange the seasoned zucchini slices in the skillet and let them cook for about 5 minutes until they are slightly tender.
- Add the chopped tomatoes to the skillet and cook for an additional 5 minutes until the tomatoes are just softened and the zucchini is fully cooked.
- Sprinkle the dish with additional thyme before serving warm.
