Ingredients
- 0.50 tbsp(s) Butter - Unsalted
- 1 tbsp Parmesan cheese
- 200 g Sweet potato
- 30 g Red Capsicum
Instructions
- Peel and cut the sweet potato into cubes.
- Dice the red capsicum.
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine sweet potato cubes, diced red capsicum, and unsalted butter.
- Transfer the mixture to a baking tray and bake for 25 minutes or until the sweet potatoes are tender.
- Remove from the oven and sprinkle with Parmesan cheese before serving.
