Sweet potato Pimento

Ingredients

  • 0.50 tbsp(s) Butter - Unsalted
  • 1 tbsp Parmesan cheese
  • 200 g Sweet potato
  • 30 g Red Capsicum

Instructions

  1. Peel and cut the sweet potato into cubes.
  2. Dice the red capsicum.
  3. Preheat the oven to 180°C (350°F).
  4. In a mixing bowl, combine sweet potato cubes, diced red capsicum, and unsalted butter.
  5. Transfer the mixture to a baking tray and bake for 25 minutes or until the sweet potatoes are tender.
  6. Remove from the oven and sprinkle with Parmesan cheese before serving.
