Spicy Chicken Mongolian No Rice

Ingredients

  • 0.25 cup (Sliced), Zucchini
  • 0.25 cup slices, Radishes, raw
  • 0.25 cup Chicken Breast,
  • 0.25 cup chopped, Carrots, raw
  • 0.50 cup shredded, Lettuce, green leaf, raw
  • 0.75 cucumber (8-1/4"), Cucumber - With peel, raw
  • 1 clove Garlic, raw

Instructions

  1. Mince the garlic.
  2. Chop the carrots, shred the lettuce, slice the cucumbers and radishes, and slice the zucchini.
  3. Cut the chicken breast into thin strips.
  4. In a large pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and chicken strips. Cook for about 10 minutes, stirring occasionally, until the chicken is browned and cooked through.
  5. Add the chopped carrots, sliced zucchini, and a pinch of salt to the pan. Cook for another 5 minutes until the vegetables are tender.
