Spicy Chicken Mongolian No Rice

Ingredients
- 0.25 cup (Sliced), Zucchini
- 0.25 cup slices, Radishes, raw
- 0.25 cup Chicken Breast,
- 0.25 cup chopped, Carrots, raw
- 0.50 cup shredded, Lettuce, green leaf, raw
- 0.75 cucumber (8-1/4"), Cucumber - With peel, raw
- 1 clove Garlic, raw
Instructions
- Mince the garlic.
- Chop the carrots, shred the lettuce, slice the cucumbers and radishes, and slice the zucchini.
- Cut the chicken breast into thin strips.
- In a large pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and chicken strips. Cook for about 10 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the chopped carrots, sliced zucchini, and a pinch of salt to the pan. Cook for another 5 minutes until the vegetables are tender.
- Serve the chicken and vegetables over a bed of shredded lettuce, topped with sliced cucumbers and radishes.
