Ingredients
- 0.50 cup 1/2 Cup Fresh Zucchini
- 1 eggplant peeled (yield from 1-1/4 lb), Eggplant, raw
- 1 olives Olives
- 1 teaspoon Salt
- 1 tsp ground, Pepper
- 2 clove Garlic, raw
- 3 cup Spiralized Carrot Noodles
- 4 piece Tamban
- 4 tsp(s) Extra-Virgin Olive Oil
- 6 small Tomato-whole, Small
Instructions
- Rinse the Tamban (sardines) under cold water and set aside.
- Spiralize the carrots to create carrot noodles and peel the eggplant. Chop the eggplant, tomatoes, and zucchini into desired sizes.
- Mince the garlic cloves and slice the olives.
- In a bowl, mix the salt and ground pepper.
- Heat the extra-virgin olive oil in a pan over medium heat. Add the minced garlic and sauté until it's fragrant, about 2 minutes.
- Add the Tamban (sardines) to the pan and cook for 5 minutes. Remove the sardines and set aside.
- In the same pan, add the spiralized carrot noodles, chopped eggplant, zucchini, and tomatoes. Cook for 8 minutes, until the vegetables are tender.
- Gently mix in the sardines and olives into the pan. Season with the salt and pepper mixture. Cook for an additional 2 minutes, allowing all flavors to meld together.
