Sky-High Fibre Toast - Banana

Ingredients

  • 0.25 cup ( 8 oz--250 ml ), Ice Cold Water
  • 0.25 cup Non-Fat
  • 0.50 cup Quick Cook Oats
  • 1 banana (101g), Medium 6"
  • 1 packet Sugar Substitute
  • 2 large Egg, whole, cooked, fried
  • 8 slice (70 g), Whole Wheat Bread

Instructions

  1. In a bowl, mix together the sugar substitute, Quick Cook Oats, and Non-Fat milk until well blended.
  2. Peel the banana and cut it into slices.
  3. Fry the eggs to your liking, preferably using a non-stick pan to minimize the need for added fats.
  4. Toast the whole wheat bread slices until they're golden and crispy.
  5. Assemble the toast by spreading the oat mixture on the toasted bread, add a layer of fried egg and top with banana slices.
  6. Drizzle ice cold water over the assembled toast for added freshness.
