Ingredients
- 1 tbsp orange juice, raw
- 1 tsp coconut amino
- 200 g young corn, cut
Instructions
- Place the young corn in a colander or strainer. Hold it under cold running water and rinse thoroughly for about 30 seconds. Shake the colander to remove excess water and set the corn aside.
- Take a small bowl and measure 1 tablespoon of orange juice into it. Add 1 teaspoon of coconut amino to the same bowl. Using a spoon or small whisk, mix these two ingredients together until they're fully combined. The mixture should have a uniform color.
- Place a non-stick frying pan or skillet on the stove over medium heat. Allow the pan to heat up for about 1 minute. You can test if it's hot enough by holding your hand about 10 cm above the surface – you should feel the heat radiating up.
- Add the rinsed young corn to the hot pan. Carefully pour the orange juice and coconut amino mixture over the corn. Stir gently with a wooden spoon or heat-resistant spatula to coat all pieces of corn evenly with the liquid.
- Cook the corn for about 10 minutes, stirring every 2 minutes. The liquid will gradually reduce and form a light glaze on the corn. The corn is done when it's tender (you can test by piercing a piece with a fork – it should slide in easily) and has a slightly glossy appearance from the glaze.
- Turn off the heat. Transfer the glazed corn to a serving dish and serve warm.
