- 0.25 tsp ground, Pepper
- 1 cup Parsley, fresh
- 15 l chopped, Fresh Basil Leaves
- 200 g Calendula Noodles
- 70 g Red Onion
- 758 g Chicken Leg Quarter
- 8 clove Garlic, raw
Instructions
- Prep your ingredients: Finely chop the parsley, slice the garlic cloves, dice the red onion, and chop the fresh basil leaves.
- Season the chicken leg quarters with salt and pepper to taste.
- In a skillet, cook the seasoned chicken leg quarters over medium heat until they are golden brown and cooked through, about 25 minutes.
- Boil water in a pot and cook the calendula noodles according to the package instructions, then drain.
- In another pan, sauté the garlic and red onion until soft and fragrant, about 8 minutes.
- Cut the cooked chicken into bite-sized pieces and add them to the pan with garlic and onion.
- Toss in the cooked calendula noodles with the chicken, garlic, and onions mixture.
- Stir in the chopped fresh basil and parsley, and cook for an additional 5 minutes to let the flavors meld.
- Serve the pasta warm, garnished with extra basil or parsley if desired.
