Ingredients

  • 0.25 teaspoon Salt
  • 0.25 tsp ground, Pepper
  • 1 cup Parsley, fresh
  • 15 l chopped, Fresh Basil Leaves
  • 200 g Calendula Noodles
  • 70 g Red Onion
  • 758 g Chicken Leg Quarter
  • 8 clove Garlic, raw

Instructions

  1. Prep your ingredients: Finely chop the parsley, slice the garlic cloves, dice the red onion, and chop the fresh basil leaves.
  2. Season the chicken leg quarters with salt and pepper to taste.
  3. In a skillet, cook the seasoned chicken leg quarters over medium heat until they are golden brown and cooked through, about 25 minutes.
  4. Boil water in a pot and cook the calendula noodles according to the package instructions, then drain.
  5. In another pan, sauté the garlic and red onion until soft and fragrant, about 8 minutes.
  6. Cut the cooked chicken into bite-sized pieces and add them to the pan with garlic and onion.
  7. Toss in the cooked calendula noodles with the chicken, garlic, and onions mixture.
  8. Stir in the chopped fresh basil and parsley, and cook for an additional 5 minutes to let the flavors meld.
  9. Serve the pasta warm, garnished with extra basil or parsley if desired.
