Potato Carrot in Coconut Oil

Ingredients

  • 10 g Carrots, Raw, 100g
  • 10 ml Extra Virgin Coconut Oil
  • 224 g Baby Potatoes - Raw

Instructions

  1. Wash the baby potatoes thoroughly and peel the carrots.
  2. Dice the carrots into small pieces.
  3. In a pan, heat the extra virgin coconut oil over medium heat.
  4. Add the baby potatoes to the pan and cook for 10 minutes until they start to become tender.
  5. Add the diced carrots to the pan with the potatoes and cook for an additional 15 minutes, stirring occasionally until both are fully cooked and slightly golden.
