Honey Mustard Chicken Pomelo Salad

Ingredients

  • 0.50 tsp(s) Salt, table
  • 0.50 tsp ground, Spices, pepper, white
  • 1 cup (72gm), Ice Berg Lettuce
  • 1 tbsp Mayonnaise Lite
  • 1.50 oz Chicken Breast (Grilled)
  • 100 g Pomelo (1 Fruit = 200 g Environ)
  • 2 wedge Cream Cheese Wedge
  • 23.25 g All Bran - Regular

Instructions

  1. Season the chicken breast with salt and white pepper.
  2. Grill the chicken breast until fully cooked and juicy, about 10-12 minutes on medium heat.
  3. While the chicken is grilling, wash and chop the Ice Berg Lettuce and set aside.
  4. Peel and segment the pomelo, ensuring to remove as much of the white pith as possible.
  5. In a small bowl, mix the Mayonnaise Lite, Cream Cheese Wedge, and a dash of salt and pepper to create the honey mustard dressing.
  6. Slice the grilled chicken breast into thin strips.
  7. In a large salad bowl, combine the Ice Berg Lettuce, pomelo segments, All Bran, and sliced grilled chicken.
  8. Drizzle the honey mustard dressing over the salad and toss gently to combine.
