Ingredients
- 0.50 cup pulp, Tamarinds, raw
- 1 tsp(s) Salt
- 14 g Garlic, raw
- 15 g Fresh Green Chilli
- 167 g Raddish
- 192 g Eggplant, raw
- 2 tsp ground, Pepper
- 21 g Yellow Miso
- 42 g Spinach - Raw
- 54 g Red Onion
Instructions
- Prepare the vegetables: slice the eggplant, radish, and finely chop the garlic and red onion. Cut the green chili in half.
- Boil the tamarind pulp in 2 cups of water for about 15 minutes to extract the juice, then strain it to remove the seeds and husks.
- In a large pot, bring 6 cups of water to a boil, then add the strained tamarind juice, garlic, onion, and green chili. Let it simmer for 5 minutes.
- Add the sliced eggplant and radish to the pot and cook until they are tender, about 10 minutes.
- Stir in yellow miso paste until well combined, then season with salt and pepper to taste.
- Finally, add the spinach and let it wilt in the hot soup, about 2 minutes before turning off the heat.
