Healthyfied Potato Vegetable Salad

Ingredients

  • 0.25 tsp ground, Pepper
  • 1 tbsp(s) Lemon juice, raw
  • 125 g Cabbage, raw
  • 135 g Yellow, Raw
  • 256 g Garlic Marble Potatoes
  • 270 g Carrots, raw
  • 3 tbsp (15g), Mayonnaise
  • 400 g Eggplant, raw
  • 5 g Garlic, raw

Instructions

  1. Wash the Garlic Marble Potatoes, Carrots, Cabbage, Eggplant, and Yellow raw under cold water.
  2. Dice the Carrots, Cabbage, Eggplant, and Yellow raw, and mince the Garlic.
  3. Boil the Garlic Marble Potatoes in a pot of water until they are tender, about 15 minutes.
  4. In another pot, blanch the diced Carrots, Cabbage, and Eggplant for about 5 minutes, then drain.
  5. Combine the boiled potatoes, blanched vegetables, minced garlic in a large bowl.
  6. Add the mayonnaise, ground pepper, and lemon juice to the bowl. Mix well until all the ingredients are evenly coated.
