Healthyfied Carrot Spaghetti With Meatballs

Ingredients

  • 1 tsp(s) Salt
  • 1 tsp ground, Spices, pepper, black
  • 10 sprig Parsley, fresh
  • 100 g Steamed Carrots
  • 2 medium Clove (8g), Fresh
  • 200 g Eggplant, raw
  • 3 cup Spinach - Raw
  • 400 g Ground Beef

Instructions

  1. Preheat your oven to 400°F (200°C) for the meatballs.
  2. Dice the eggplant, mince the garlic, and finely chop the parsley.
  3. In a large mixing bowl, combine ground beef, eggplant, half of the minced garlic, half of the chopped parsley, salt, and black pepper. Mix well.
  4. Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
  5. Bake the meatballs for 20 minutes or until they're cooked through.
  6. While meatballs are baking, use a spiralizer or vegetable peeler to create carrot spaghetti from the steamed carrots.
  7. Steam the spinach until wilted, about 2-3 minutes. Set aside.
  8. In a pan, sauté the remaining garlic in a little bit of oil over medium heat until fragrant, about 1 minute.
  9. Add the carrot spaghetti to the pan, tossing it with the garlic for about 2-3 minutes just to warm through.
  10. Serve the carrot spaghetti topped with meatballs, steamed spinach, and a sprinkle of the remaining parsley.
