Ingredients
- 1 tsp(s) Salt
- 1 tsp ground, Spices, pepper, black
- 10 sprig Parsley, fresh
- 100 g Steamed Carrots
- 2 medium Clove (8g), Fresh
- 200 g Eggplant, raw
- 3 cup Spinach - Raw
- 400 g Ground Beef
Instructions
- Preheat your oven to 400°F (200°C) for the meatballs.
- Dice the eggplant, mince the garlic, and finely chop the parsley.
- In a large mixing bowl, combine ground beef, eggplant, half of the minced garlic, half of the chopped parsley, salt, and black pepper. Mix well.
- Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
- Bake the meatballs for 20 minutes or until they're cooked through.
- While meatballs are baking, use a spiralizer or vegetable peeler to create carrot spaghetti from the steamed carrots.
- Steam the spinach until wilted, about 2-3 minutes. Set aside.
- In a pan, sauté the remaining garlic in a little bit of oil over medium heat until fragrant, about 1 minute.
- Add the carrot spaghetti to the pan, tossing it with the garlic for about 2-3 minutes just to warm through.
- Serve the carrot spaghetti topped with meatballs, steamed spinach, and a sprinkle of the remaining parsley.
