Instructions
- Peel the sweet potato, then grate it into thin strips.
- Dice the ham into small, bite-sized pieces.
- In a pan over medium heat, cook the grated sweet potato for about 5 minutes, or until it starts to soften.
- Add the diced ham to the pan with the sweet potato and cook for another 5 minutes, until the ham is lightly browned.
- Create a well in the center of the sweet potato and ham mixture. Crack the egg into the well, cover the pan, and cook for about 3-5 minutes, or until the egg is cooked to your liking.
