Healthyfied Cabbage Shanghai

Ingredients

  • 1 teaspoon Salt
  • 1 tsp ground (2.3 g), Black Pepper - Ground
  • 130 g Red
  • 2 large Egg
  • 250 g Pork, fresh, ground, raw
  • 296 g Eggplant, raw
  • 30 g Carrots, raw
  • 300 g Cabbage, raw
  • 400 g Silken Tofu

Instructions

  1. Rinse and finely shred the cabbage. Cut the eggplant and carrots into thin strips. Crumble the silken tofu.
  2. Whisk the eggs in a large mixing bowl.
  3. Add the shredded cabbage, eggplant strips, crumbled tofu, shredded carrot, ground pork, salt, and ground black pepper to the bowl with the whisked eggs. Mix well.
  4. Preheat a skillet over medium heat. Take spoonfuls of the mixture and form them into small rolls. Cook in batches, turning occasionally, until golden brown and the pork is fully cooked, about 8 minutes.
