Ingredients

  • 0.25 teaspoon Salt
  • 120 g Eggplant, raw
  • 50 g Capsicum Green
  • 70 g White Onion Raw

Instructions

  1. Rinse the eggplant, onion, and capsicum under cold water.
  2. Bring a pot of water to boil. Meanwhile, cut the eggplant into halves.
  3. Boil the eggplant halves for 8-10 minutes until tender.
  4. While the eggplant is boiling, thinly slice the white onion and capsicum.
  5. Once the eggplant is cooked and cooled, gently peel and cut it into strips.
  6. In a bowl, combine the eggplant strips with the sliced onion and capsicum. Season with 0.25 teaspoon of salt, and mix well.
