Ingredients

  • 0.25 tsp ground, Pepper
  • 1 tsp(s) Spices, garlic powder
  • 1 tsp Thyme, fresh
  • 15 g Butter - Unsalted
  • 150 g Tomatoes
  • 190 g Fresh String Beans
  • 2 tbsp , Extra Virgin Olive Oil
  • 218 g Young Corn - Cut
  • 3 large Egg
  • 300 g Eggplant, raw
  • 40 g Red Onion
  • 420 g Boneless Milkfish (Bangus)

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Rinse the Boneless Milkfish under cold water and pat dry with paper towels. Place on a baking tray.
  3. Wash the Eggplant, Young Corn, Tomatoes, and Fresh String Beans, then cut into desired pieces. Peel and finely chop the Red Onion.
  4. Arrange the chopped vegetables around the Milkfish on the baking tray.
  5. In a small bowl, beat the Eggs with Thyme, Pepper, and Garlic Powder.
  6. Drizzle the Eggplant, Young Corn, Tomatoes, and String Beans with Extra Virgin Olive Oil and sprinkle with sea salt to taste.
  7. Dollop Butter and the beaten egg mixture over the Milkfish and vegetables.
  8. Bake in the preheated oven until the Milkfish is cooked through and the vegetables are tender, about 20-25 minutes.
  9. Serve the Healthified warm, garnished with fresh thyme if desired.
