Ingredients

- 1 tsp ground (2.3 g), Black Pepper - Ground
- 133 g Yellow, Raw
- 177 g Cauliflower - Raw
- 22 g Garlic, raw
- 3 tsp(s) Lemon juice, raw
- 59 g Red Onion
Instructions
- Rinse the cauliflower, red onion, and yellow bell pepper under cold water.
- Chop the cauliflower into florets, dice the red onion, and chop the yellow bell pepper.
- Mince the garlic.
- In a food processor, pulse the cauliflower florets until they reach a rice-like consistency.
- In a large skillet over medium heat, sauté the diced red onion and chopped yellow bell pepper for about 5 minutes, until softened.
- Add the minced garlic to the skillet and cook for an additional 1 minute, until fragrant.
- Stir in the cauliflower rice, and continue to sauté for about 8 minutes, until the cauliflower is tender.
- Season with salt and ground black pepper to taste.
- Stir in the lemon juice and cook for an additional 2 minutes.
