Eggplant Egg

Ingredients

  • 1 medium Egg
  • 176 g Eggplant, raw

Instructions

  1. Wash the eggplant thoroughly under cold running water.
  2. Slice the eggplant into 1/2 inch thick rounds.
  3. In a large skillet, heat a small amount of olive oil over medium heat. Add the eggplant slices and cook for 5 minutes on each side or until they become tender.
