Ingredients
- 1 carrot Medium, Medium Carrot
- 1 medium Clove (8g), Fresh
- 1 tbsp Cane Vinegar
- 1 fillet Cream Dory
- 100 g Extra Firm
- 133 g Cucumber
- 18 fluid ounce, Yogurt
- 2 cup Chopped Romaine
- 25 g Green Bellpepper
- 25 g Yellow Bellpepper
- 50 g Tomatoes
- 500 g Dragonfruit
Instructions
- Chop the romaine, medium carrot, tomatoes, and extra firm tofu into bite-sized pieces.
- Dice the cucumber, yellow and green bell peppers.
- Peel and dice the dragonfruit. Set aside to be used in the salad dressing.
- Season the cream dory fillet with a pinch of salt and pepper.
- In a skillet over medium heat, cook the cream dory fillet for 4 minutes on each side or until golden brown and cooked through. Allow it to cool, then flake into pieces.
- In a small bowl, mix the yogurt, cane vinegar, and minced fresh garlic to prepare the dressing. Mash half of the diced dragonfruit and blend it into the dressing for a sweet and tangy flavor.
- In a large bowl, combine the chopped and diced vegetables, flaked dory, and the remaining diced dragonfruit. Toss gently.
- Drizzle the dragonfruit yogurt dressing over the salad and toss well to coat all the ingredients.
