Ingredients

  • 1 carrot Medium, Medium Carrot
  • 1 medium Clove (8g), Fresh
  • 1 tbsp Cane Vinegar
  • 1 fillet Cream Dory
  • 100 g Extra Firm
  • 133 g Cucumber
  • 18 fluid ounce, Yogurt
  • 2 cup Chopped Romaine
  • 25 g Green Bellpepper
  • 25 g Yellow Bellpepper
  • 50 g Tomatoes
  • 500 g Dragonfruit

Instructions

  1. Chop the romaine, medium carrot, tomatoes, and extra firm tofu into bite-sized pieces.
  2. Dice the cucumber, yellow and green bell peppers.
  3. Peel and dice the dragonfruit. Set aside to be used in the salad dressing.
  4. Season the cream dory fillet with a pinch of salt and pepper.
  5. In a skillet over medium heat, cook the cream dory fillet for 4 minutes on each side or until golden brown and cooked through. Allow it to cool, then flake into pieces.
  6. In a small bowl, mix the yogurt, cane vinegar, and minced fresh garlic to prepare the dressing. Mash half of the diced dragonfruit and blend it into the dressing for a sweet and tangy flavor.
  7. In a large bowl, combine the chopped and diced vegetables, flaked dory, and the remaining diced dragonfruit. Toss gently.
  8. Drizzle the dragonfruit yogurt dressing over the salad and toss well to coat all the ingredients.
