Coconut Banana Pancake

Ingredients

  • 1 cup(s) Coconut Flour
  • 1 l Extra Virgin Coconut Oil
  • 1 tsp(s) Salt
  • 12 banana Saba Banana
  • 3 tsp Baking Powder
  • 5 g Eggs

Instructions

  1. Mash the Saba Banana until smooth.
  2. In a large bowl, mix together the mashed banana, coconut flour, eggs, baking powder, and salt until well combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of extra virgin coconut oil.
  4. Pour a scoop of the pancake batter into the skillet, cook for about 3 minutes on each side or until golden brown.
  5. Repeat the process with the remaining batter, adding more coconut oil to the skillet as needed.
