Ingredients

- 1 cup Potato
- 2 tablespoon Mayo
- 5 g Carrots, raw
- 5 g Lean Rasher
- 5 g Lettuce, green leaf, raw
Instructions
- Peel and dice the potatoes into bite-sized pieces.
- Bring a pot of salted water to a boil and add the diced potatoes. Cook until tender, about 15 minutes.
- While the potatoes are cooking, dice the carrots and cut the lean rasher into small pieces.
- In a pan over medium heat, cook the lean rasher pieces until crispy, about 5 minutes.
- In a large bowl, mix the cooked potatoes, crispy lean rasher, diced carrots, and chopped green leaf lettuce.
- Season with salt and ground pepper to taste.
- Add 2 tablespoons of mayo to the salad and gently toss to combine.
