Ingredients

  • 0.25 cup raw (92g), Bellpepper
  • 0.50 head large (about 5-1/2" dia), Cabbage, red, raw
  • 0.50 large ear (7-9" long), White on the Cob
  • 1 medium Size Zucchini, Zucchini Slice
  • 1 cup/85 g (uncooked), Kabocha Squash
  • 1 eggplant peeled (yield from 1-1/4 lb), Eggplant, raw
  • 1 large Mushrooms, enoki, raw
  • 1 tbsp Butter - Salted
  • 2 fillet Fish, mackerel, Atlantic, raw
  • 2 tsp(s) Virgin Coconut Oil
  • 30 g Yellow Bellpepper
  • 432 g Yakiniku (Beef Tips)
  • 50 g Daikon Root

Instructions

  1. Prepare the vegetables: peel and slice the Daikon Root, husk and slice the White on the Cob, slice the raw Bellpeppers, peel and slice the eggplant, and slice the red cabbage and medium-size Zucchini.
  2. Preheat a grill pan over medium heat and lightly grease it with Virgin Coconut Oil.
  3. Grill the Yakiniku Beef Tips on the preheated pan, turning occasionally, until browned and cooked through, about 10 minutes.
  4. In a separate pan, melt the Butter - Salted over medium heat. Add the sliced vegetables (Daikon Root, Corn, Bellpeppers, Eggplant, Red Cabbage, and Zucchini) and sauté until they start to soften, about 5-7 minutes.
  5. Add the Mushrooms, enoki, raw to the vegetables and continue to sauté until all vegetables are tender, about 3-4 minutes.
  6. Grill the Fish, mackerel, Atlantic, raw fillets on the preheated grill pan until cooked through, about 5-6 minutes per side.
  7. Assemble the meal by adding a serving of grilled Yakiniku Beef and Mackerel on a plate, accompanied by the colorful array of sautéed vegetables and Kabocha Squash on the side.
