Ingredients

  • 1 large Egg
  • 100 g Bacon
  • 12 g Garlic, raw
  • 120 g Carrots, raw
  • 40 g Bellpepper
  • 50 g Red Bellpepper (Ounces)
  • 70 g Adlai Rice (Job's Tears)
  • 70 g Red Onion

Instructions

  1. Rinse the Adlai Rice under cold water until the water runs clear.
  2. Cook the Adlai Rice according to package instructions until tender, then set aside. This should take about 20 minutes.
  3. Dice the carrots, red bell pepper, bell pepper, and red onion.
  4. Mince the garlic.
  5. In a skillet, cook the bacon over medium heat until crisp. Remove the bacon and set aside on a paper towel to drain the excess grease.
  6. In the same skillet with the bacon grease, sauté the diced carrots, bell peppers, red onion, and minced garlic over medium heat until softened, about 5 minutes.
  7. Chop the cooked bacon into small pieces.
  8. Combine the cooked Adlai Rice, sautéed vegetables, and chopped bacon in a large bowl.
  9. Crack the egg into the skillet and scramble until fully cooked, then stir into the rice mixture.
