Ingredients
- 1 large Egg
- 100 g Bacon
- 12 g Garlic, raw
- 120 g Carrots, raw
- 40 g Bellpepper
- 50 g Red Bellpepper (Ounces)
- 70 g Adlai Rice (Job's Tears)
- 70 g Red Onion
Instructions
- Rinse the Adlai Rice under cold water until the water runs clear.
- Cook the Adlai Rice according to package instructions until tender, then set aside. This should take about 20 minutes.
- Dice the carrots, red bell pepper, bell pepper, and red onion.
- Mince the garlic.
- In a skillet, cook the bacon over medium heat until crisp. Remove the bacon and set aside on a paper towel to drain the excess grease.
- In the same skillet with the bacon grease, sauté the diced carrots, bell peppers, red onion, and minced garlic over medium heat until softened, about 5 minutes.
- Chop the cooked bacon into small pieces.
- Combine the cooked Adlai Rice, sautéed vegetables, and chopped bacon in a large bowl.
- Crack the egg into the skillet and scramble until fully cooked, then stir into the rice mixture.
