Ingredients
- 0.25 teaspoon Salt
- 1 large Egg
- 109 g Carrots, raw
- 2 tsp(s) Coconut
- 40 g Adlai Rice (Job's Tears)
Instructions
- Rinse the Adlai Rice under cold water until the water runs clear.
- Cook the Adlai Rice according to package instructions until tender, about 20 minutes, then set aside.
- Peel and dice the carrots into small pieces.
- Crack the egg into a bowl, beating it lightly with a fork.
- Heat a non-stick pan over medium heat and add the coconut. Wait until it is hot, then add the diced carrots. Cook for about 5 minutes until they start to soften.
- Push the carrots to one side of the pan, and pour in the beaten egg on the other side. Let it set for a minute before scrambling it and mixing with the carrots.
- Add the cooked Adlai Rice to the pan. Season with salt. Stir everything together and cook for an additional 5 minutes, making sure the rice is heated through.
