Ingredients

  • 0.25 teaspoon Salt
  • 1 large Egg
  • 109 g Carrots, raw
  • 2 tsp(s) Coconut
  • 40 g Adlai Rice (Job's Tears)

Instructions

  1. Rinse the Adlai Rice under cold water until the water runs clear.
  2. Cook the Adlai Rice according to package instructions until tender, about 20 minutes, then set aside.
  3. Peel and dice the carrots into small pieces.
  4. Crack the egg into a bowl, beating it lightly with a fork.
  5. Heat a non-stick pan over medium heat and add the coconut. Wait until it is hot, then add the diced carrots. Cook for about 5 minutes until they start to soften.
  6. Push the carrots to one side of the pan, and pour in the beaten egg on the other side. Let it set for a minute before scrambling it and mixing with the carrots.
  7. Add the cooked Adlai Rice to the pan. Season with salt. Stir everything together and cook for an additional 5 minutes, making sure the rice is heated through.
