- 10 g Olives
- 15 g (1 mediano), Pomelo
- 15 g Baby Leaf Rocket
- 15 g Beans
- 15 g Beet Root
- 15 g Spinach - Raw
- 30 g Broccoli, raw
Instructions
- Rinse the spinach, cabbage, beet root, and broccoli under cold water until clean.
- Cook the lentils and beans in boiling water according to package instructions until tender, then drain. Estimated time: 20 minutes.
- Peel and section the pomelo.
- Boil the egg until hard-boiled, approximately 10 minutes, then cool, peel, and slice or chop.
- Chop the olives, beet root, and broccoli into bite-sized pieces.
- In a large salad bowl, combine the spinach, shredded red cabbage, chopped olives, lentils, beans, beet root, broccoli, pomelo sections, and baby leaf rocket. Toss gently to mix.
