  • 15 g Baby Leaf Rocket

  • 15 g Beet Root
  • 15 g Spinach - Raw
  • 30 g Broccoli, raw

Instructions

  1. Rinse the spinach, cabbage, beet root, and broccoli under cold water until clean.
  2. Cook the lentils and beans in boiling water according to package instructions until tender, then drain. Estimated time: 20 minutes.
  3. Peel and section the pomelo.
  4. Boil the egg until hard-boiled, approximately 10 minutes, then cool, peel, and slice or chop.
  5. Chop the olives, beet root, and broccoli into bite-sized pieces.
  6. In a large salad bowl, combine the spinach, shredded red cabbage, chopped olives, lentils, beans, beet root, broccoli, pomelo sections, and baby leaf rocket. Toss gently to mix.
