Ingredients

  • 1 tsp Thyme, fresh
  • 198 g Carrots, raw
  • 350 g Broccoli, raw
  • 516 g Longganisa

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the carrots and broccoli under cold water. Pat them dry with a paper towel.
  3. Cut the carrots into bite-sized pieces and chop the broccoli into florets.
  4. Place the carrots and broccoli on a baking sheet. Drizzle with olive oil and sprinkle with fresh thyme. Toss to coat evenly.
  5. Roast in the preheated oven for 25 minutes, or until the vegetables are tender and slightly caramelized.
  6. While the vegetables are roasting, remove the casing from the Longganisa and form into small patties.
  7. Cook the Longganisa patties in a skillet over medium heat for about 10 minutes, turning once, until fully cooked.
  8. Serve the roasted carrots and broccoli alongside the cooked Longganisa patties.
