Ingredients
- 1 tsp Thyme, fresh
- 198 g Carrots, raw
- 350 g Broccoli, raw
- 516 g Longganisa
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the carrots and broccoli under cold water. Pat them dry with a paper towel.
- Cut the carrots into bite-sized pieces and chop the broccoli into florets.
- Place the carrots and broccoli on a baking sheet. Drizzle with olive oil and sprinkle with fresh thyme. Toss to coat evenly.
- Roast in the preheated oven for 25 minutes, or until the vegetables are tender and slightly caramelized.
- While the vegetables are roasting, remove the casing from the Longganisa and form into small patties.
- Cook the Longganisa patties in a skillet over medium heat for about 10 minutes, turning once, until fully cooked.
- Serve the roasted carrots and broccoli alongside the cooked Longganisa patties.
