2018/11/06 Lunch Tilapia Caulirice

Ingredients

  • 0.12 teaspoon Salt
  • 0.12 tsp ground, Pepper
  • 1 tsp Spices, marjoram, dried
  • 300 g Eggplant, raw
  • 600 g Tilapia

Instructions

  1. Rinse the Tilapia under cold water and pat dry with paper towels.
  2. Slice the eggplant into small cubes.
  3. Season the tilapia with marjoram, salt, and pepper.
  4. Preheat a non-stick pan over medium heat and cook the tilapia for 4 minutes on each side or until it flakes easily with a fork.
  5. Remove the tilapia and in the same pan, add the eggplant cubes. Cook until they are tender, approximately 5 minutes.
  6. Serve the tilapia atop the cooked eggplant as a healthy and satisfying caulirice alternative.
