Ingredients

  • 0.25 teaspoon Salt
  • 0.25 tsp ground, Pepper
  • 15 g Garlic, raw
  • 190 g Adlai Rice (Job's Tears)
  • 2 tablespoon Coconut Amino
  • 2 tbsp(s) Papaya Relish (43515.0)
  • 200 g Tomatoes
  • 250 g Okra, raw
  • 250 g chicken
  • 3 large Egg
  • 30 g Red Onion
  • 90 g Capsicum - Green

Instructions

  1. Rinse the Adlai Rice under cold water until the water runs clear.
  2. Cook the Adlai Rice according to package instructions until tender, then set aside.
  3. Slice the chicken into bite-sized pieces.
  4. Cut the ends off the okra and slice into rounds.
  5. Dice the tomatoes and capsicum.
  6. Finely chop the red onion and garlic.
  7. Beat the eggs in a bowl and season with salt and pepper.
  8. In a large skillet over medium heat, cook the chicken pieces until browned and cooked through, about 10 minutes.
  9. Add the onion and garlic to the skillet and sauté until soft, about 5 minutes.
  10. Add the okra, tomatoes, and capsicum to the skillet and cook until they're softened, about 10 minutes.
  11. Drizzle the coconut amino over the mixture and add the papaya relish, stirring well to combine.
  12. Pour the beaten eggs over the skillet mixture, allowing the eggs to set without stirring, about 5 minutes.
  13. Gently fold the cooked Adlai Rice into the skillet, mixing well to ensure everything is evenly incorporated.
