This high-protein, low-sugar meal is perfect for those who want to enjoy a healthy and delicious lunch. Featuring marinated baby bangus, tortang talong, fresh tomatoes, okra, and a hint of coconut with the dressing, it's a meal that's both nourishing and full of flavor.

Ingredients

  • 1 large Egg
  • 1 tablespoon Coconut Amino
  • 1 tbsp Coconut Vinegar
  • 100 g Tomatoes
  • 100 g Tortang Talong
  • 200 g Marinated Baby Bangus
  • 300 g Okra, raw

Instructions

  1. Preheat your grill or pan over medium heat.
  2. Wash the tomatoes and okra under cold water, then slice the tomatoes and cut the okra into half-inch pieces.
  3. Beat the egg in a small bowl.
  4. Prepare the tortang talong by dipping the sliced eggplant in the beaten egg, then frying it until golden brown on both sides.
  5. Grill the marinated baby bangus until it is fully cooked, approximately 10 minutes each side.
  6. In a small bowl, mix the coconut amino and coconut vinegar to make a simple dressing.
  7. Serve the grilled bangus and tortang talong with fresh slices of tomato, okra, and a drizzle of the coconut dressing.
