- 1 pat (1" sq, 1/3" high), Butter - Unsalted
- 100 g Eggplant, raw
- 14 g Sharp Cheddar Cheese
- 2 cup (133 g), Sweet Potato
- 2 medium Carrots, raw
- 374 g Sirloin, Raw
Instructions
- Prep your ingredients: Dice the carrots, eggplant, sweet potato, and zucchini into bite-sized pieces. Grate the sharp cheddar cheese.
- Season the sirloin with salt and ground black pepper to taste.
- In a large skillet, melt the butter over medium heat. Add the seasoned sirloin and cook for about 8 minutes on each side for medium-rare, or until desired doneness. Remove the sirloin from the skillet and set aside.
- Cook the diced vegetables until they're tender and lightly browned, about 10 minutes.
