Ingredients
- 0.25 teaspoon Salt
- 1 tbsp leaves, Spices, thyme, dried
- 15 g (1 Tbsp), Butter Unsalted
- 200 g Broccoli, raw
- 30 g Capsicum - Green
- 400 g Cauliflower - Raw
- 6 large Egg
- 60 g Red
- 60 g Yellow, Raw
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the cauliflower and broccoli under cold water, then chop them into bite-sized florets.
- Dice the red, yellow, and green capsicum.
- In a large bowl, whisk the eggs and season with salt.
- Grease a baking dish with butter, then add the chopped vegetables. Pour the whisked eggs over the vegetables evenly.
- Sprinkle the dried thyme leaves over the top.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the vegetables are tender.
