2018/10/09 Dinner Vegetables (Meat is Chicken Tomato)

Ingredients

  • 0.25 teaspoon Salt
  • 1 tbsp leaves, Spices, thyme, dried
  • 15 g (1 Tbsp), Butter Unsalted
  • 200 g Broccoli, raw
  • 30 g Capsicum - Green
  • 400 g Cauliflower - Raw
  • 6 large Egg
  • 60 g Red
  • 60 g Yellow, Raw

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the cauliflower and broccoli under cold water, then chop them into bite-sized florets.
  3. Dice the red, yellow, and green capsicum.
  4. In a large bowl, whisk the eggs and season with salt.
  5. Grease a baking dish with butter, then add the chopped vegetables. Pour the whisked eggs over the vegetables evenly.
  6. Sprinkle the dried thyme leaves over the top.
  7. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the vegetables are tender.
