Ingredients
- 1 tbsp Coconut
- 150 g Cucumber
- 2 cup Kimchi
- 200 g chicken
- 250 g Belly
- 30 g Red Onion
- 95 g Adlai Rice (Job's Tears)
Instructions
- Rinse the Adlai Rice (Job's Tears) under cold water until the water runs clear.
- Cook the Adlai Rice according to package instructions until tender, about 20 minutes. Then set aside.
- Slice the red onion, dice the cucumber, and chop the belly and chicken into bite-sized pieces.
- In a pan, heat the coconut oil over medium heat and sauté the chopped belly and chicken until they're browned and cooked through, about 15 minutes.
- Add the sliced red onion to the pan and cook until softened, about 5 minutes.
- Stir in the kimchi and diced cucumber, and cook for another 5 minutes until everything is heated through.
- Combine the cooked ingredients with the Adlai Rice in a large bowl. Mix well until everything is evenly distributed.
