Ingredients

  • 1 tbsp Coconut
  • 150 g Cucumber
  • 2 cup Kimchi
  • 200 g chicken
  • 250 g Belly
  • 30 g Red Onion
  • 95 g Adlai Rice (Job's Tears)

Instructions

  1. Rinse the Adlai Rice (Job's Tears) under cold water until the water runs clear.
  2. Cook the Adlai Rice according to package instructions until tender, about 20 minutes. Then set aside.
  3. Slice the red onion, dice the cucumber, and chop the belly and chicken into bite-sized pieces.
  4. In a pan, heat the coconut oil over medium heat and sauté the chopped belly and chicken until they're browned and cooked through, about 15 minutes.
  5. Add the sliced red onion to the pan and cook until softened, about 5 minutes.
  6. Stir in the kimchi and diced cucumber, and cook for another 5 minutes until everything is heated through.
  7. Combine the cooked ingredients with the Adlai Rice in a large bowl. Mix well until everything is evenly distributed.
