Ingredients

  • 1 tablespoon Coconut Amino
  • 1 tbsp Coconut Vinegar
  • 15 g Okra, raw
  • 40 g Tomatoes
  • 45 g Eggplant, raw
  • 80 g Shrimps

Instructions

  1. Rinse the eggplant, okra, and tomatoes under cold water. Chop the eggplant and okra, and dice the tomatoes.
  2. Peel and devein the shrimps, if not already done so.
  3. In a bowl, mix together coconut amino and coconut vinegar to create the marinade.
  4. Marinate the shrimps in the prepared sauce for 10 minutes.
  5. In a skillet over medium heat, sauté the marinated shrimps for 5 minutes or until they are fully cooked. Remove from the skillet and set aside.
  6. In the same skillet, add the chopped eggplant and okra. Cook for about 5 minutes.
  7. Add the diced tomatoes to the skillet and cook for an additional 3 minutes.
  8. Return the cooked shrimps to the skillet, stirring to combine all the ingredients. Heat through for 2 minutes.
  9. Serve hot and enjoy your delicious, healthified dinner.
