Ingredients
- 1 tablespoon Coconut Amino
- 1 tbsp Coconut Vinegar
- 15 g Okra, raw
- 40 g Tomatoes
- 45 g Eggplant, raw
- 80 g Shrimps
Instructions
- Rinse the eggplant, okra, and tomatoes under cold water. Chop the eggplant and okra, and dice the tomatoes.
- Peel and devein the shrimps, if not already done so.
- In a bowl, mix together coconut amino and coconut vinegar to create the marinade.
- Marinate the shrimps in the prepared sauce for 10 minutes.
- In a skillet over medium heat, sauté the marinated shrimps for 5 minutes or until they are fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the chopped eggplant and okra. Cook for about 5 minutes.
- Add the diced tomatoes to the skillet and cook for an additional 3 minutes.
- Return the cooked shrimps to the skillet, stirring to combine all the ingredients. Heat through for 2 minutes.
- Serve hot and enjoy your delicious, healthified dinner.
